Made the fillet steak sandwich that Gordon Ramsay made famous — and he ended up duetting my video of it. We cooked it riverside in Glenarm: fillet steak seared in a cast iron pan, basted with garlic, butter and thyme, then rested and sliced thin. Served in a toasted ciabatta with mustard mayo, caramelised onions and fresh rocket. Simple, rich, and full of flavour.
